Fall Veggie Kebabs
Ok --for you doubters and people who fail on getting your veggies every day, this is a FILLING recipe. You get a lot of food, a few veggie servings and WOW -- under 300 calories!
- 4 corns of cob - husked - 3 zucchini - 3 sweet peppers (any color you like, red, green, orange, yellow -- mix it up!) - 1 tbsp vegetable oil
Coriander Lime Butter - 2 tbsp butter - 1 tbsp minced fresh coriander - 1 tbsp lime juice - 1/4 tsp each salt and pepper

In saucepan, cook or steam corn until tender but firm. Let cool and cut into 1 inch pieces. Cut zucchini into 3/4 inch thick rounds. Seed, core and cut peppers into 2 inch squares. Alternately thread vegetables onto metal skewers (or soaked wooden skewers) You can do this up to 24 hours ahead of time if you wish. |
Brush skewers with oil and place on greased grill over medium high heat. Close lid and grill for 10 minutes turning as needed. |
Meanwhile whisk together the coriander lime butter ingredients and brush over skewered vegetables. Grill until vegetables are tender. |
