Recipe of the Day — She Crab Soup

Feels like a soup day here with all grey skies and chill in the air. Here is a healthy lighter version to she crab soup.

- 2 tsps olive oil
- 1 small onion, finely chopped
- 1 celery stalk, finely chopped
- 2 scallions, sliced
- 4 cups low-fat (1%) milk
- 3 tbsp all-purpose flour
- 1/2 pound lump crabmeat
- 1 tsp grated lemon zest
- 3 Tbsp dry sherry
- 1 hard cooked egg yolk, chopped or crumbled
- 2 tbsp fresh chopped parsley

In a large saucepan, heat oil over medium heat. Add onion, celery, scallions. Stirring occasionally , until softened, about 5 minutes. Add milk and flour and whisk until smooth.
Bring to a simmer and cook, stirring frequently, 5 minutes. Stir in the crab, lemon zest. Cook until the crab is heated through about 3 minutes. Stir in the sherry.
Ladle into bowls and sprinkle with egg yolk and parsley. Makes 6 servings.

Children Need YOU TO BE the cook and the PARENT

There is an epidemic of obese children in this country and I read a HORRIBLE article on one of the Atlanta news blogs about children getting weight loss surgery.

Sorry but I don’t believe there are very many people who actually NEED that and there really can’t be any children who do.

Sure there are tons of kids who are overweight and struggling. That is where YOU as the parent have to stand up and help. Children don’t magically know what to eat or how many calories is in this or that or how many servings of vegetables they need or even how much is a serving.

Take some time to talk to your children about healthy eating, servings, portion size, a balanced diet. Do this whether your kids are thin or not because it is a lesson that will benefit them for their ENTIRE LIFE.
