So my son’s favorite vegetable is asparagus which I have always thought to be an interesting choice for a child. Of course I think many vegetables are appealing to children when prepared properly (not boiled to death, not from a can, etc)

So I know it has a lot of vitamin C but I thought what else?? Well turns out a WHOLE LOT. Just 6 spears will meet 1/2 your folic acid requirement and that protects you from cancer, heart disease, liver disease and so much more.

There are symbols of asparagus dating back to Ancient Egypt and Greece — seems we just need to look at nature and history to know how to eat healthy.

So if you have never tried it — seriously – this is not the “from the can” variety that you remember from your childhood. Pick some up, steam it, roast it with some garlic and find that those very few calories not only are delicious but healthy!!
