Boiling carrots is actually fine so boil them until tender.
The boiling makes the carotenoids more concentrated according to a study published in the Journal of Agricultural and Food Chemistry.
Adding a drop of oil to the water also helps you to be able to absorb more of the beta carotene.

Boiling the life out of asparagus also boils out all the water soluble nutrients in those delicate tips.
Instead steam them upright which keeps minimal water and keeps the tips out of the water. This helps to preserve almost all the nutrients of the raw vegetable.
